Bo’s Nutty Brown Rice Salad for “Nutty People” August 23 2013

Base:
1 cup brown uncooked rice (rinse rice until water runs clear. Add 1 3/4 cups water. Cook 45 min or until water is absorbed, or use a rice cooker)
1⁄4 soy sauce (or tamari)
1⁄2 medium onion finely chopped (add to cooked rice while it is still hot, leave for two hrs. or overnight)

Dressing (mix together):

1⁄4 cup olive oil (or canola or grape seed)
1 tbsp lemon juice
1 tsp. grated lemon rind
1 clove garlic minced
1 tsp. grated lemon rind
1 tsp. grated ginger
1 tsp. honey or sugar or agave nectar

Just before serving add:
1 red pepper finely chopped
1⁄2 cup sultana raisins
3 green onions chopped (optional)

plus 1⁄2 cup of each of the following:
Bo’s Buds hemp seeds
pumpkin seeds
sunflower seeds
crushed peanuts (optional)
